Here's a sample recipe from the cookbook how to make the crepes / palacsinta
1 cup flour
1 egg
1 tablespoon sugar
1 pinch salt
2 tablespoons oil (corn or grape seed)
1/2 tablespoon lemon
zest
1 teaspoon vanilla
1 1/4 cups milk
In a big bowl add milk, flour, sugar, salt and eggs and mix well. Next, slowly add oil and mix until smooth. Set aside for 10 minutes.
In a non-stick pan (see sample above), pour 1 small serving spoon of crepe mix and swirl it over the bottom of the pan. Cook one side for 1 minute and turn it over with a spatula. Then cook the other side for 1 minute. (Cooking time is up to you, depending on if you like it light or brown.)
Fill it with apricot jam and add chopped walnuts or anything you desire. Roll it up with the filling and sprinkle powder sugar on top.
Enjoy this delicious treat - serve any time!
TIP CORNER: Before making the first crepe, add 1/4 teaspoon oil to the pan.
